Mediterranean Chicken Zucchini Bake
A hearty and flavorful one-pan dish that combines juicy chicken, tender vegetables, and creamy feta cheese for a satisfying Mediterranean-inspired meal.
Ingredients:
β 3 boneless, skinless chicken breasts, cut into bite-sized pieces π
β 2 medium zucchinis, sliced into rounds π₯
β 1 pint cherry tomatoes, halved π
β 1 red bell pepper, diced πΆοΈ
β 1/2 red onion, thinly sliced π§
β 3 garlic cloves, minced π§
β 1/4 cup olive oil πΏ
β 1 teaspoon dried oregano πΏ
β 1 teaspoon dried basil πΏ
β 1/2 teaspoon dried thyme πΏ
β Salt and pepper to taste π§
β 1/2 cup crumbled feta cheese π§
β Fresh parsley, chopped (optional) πΏ

Directions:
- Preheat your oven to 400Β°F (200Β°C). Grease a large baking dish with olive oil.
- Combine the chicken pieces, zucchini slices, cherry tomatoes, red bell pepper, red onion, and minced garlic in a large bowl.
- Drizzle olive oil over the chicken and vegetables. Add oregano, basil, thyme, salt, and pepper. Toss until well coated.
- Transfer the mixture to the baking dish, spreading it out evenly.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
- Sprinkle feta cheese over the top and bake for 5 more minutes until slightly melted.
- Garnish with chopped parsley if desired before serving.
