🍏 Mediterranean Apple Oatmeal Pancakes

Ingredients

  • 1 cup rolled oats (blended into flour)
  • 1 cup grated apple (peeled if preferred)
  • 2 eggs
  • ½ cup Greek yogurt (adds protein & Mediterranean creaminess)
  • ¼ cup milk (or almond milk)
  • 2 tbsp olive oil (or melted butter)
  • 2 tbsp honey (or date syrup)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp sunflower seeds (or chopped nuts – walnuts, almonds, pistachios)

Instructions

  1. Prepare the Oats
    • Blend oats into a fine flour.
  2. Mix the Batter
    • In a bowl, whisk eggs, yogurt, milk, honey, olive oil, and vanilla.
    • Add oat flour, baking powder, cinnamon, and salt.
    • Fold in grated apple and sunflower seeds (or nuts).
  3. Cook Pancakes
    • Heat a non-stick skillet with a touch of olive oil.
    • Pour batter in small rounds.
    • Cook 2–3 minutes per side until golden and fluffy.
  4. Serve Mediterranean Style
    • Drizzle with honey or date syrup.
    • Top with Greek yogurt, fresh figs, pomegranate seeds, or a sprinkle of chopped pistachios.
    • Add a squeeze of lemon for brightness.
