🍏 Mediterranean Apple Oatmeal Pancakes
Ingredients
- 1 cup rolled oats (blended into flour)
- 1 cup grated apple (peeled if preferred)
- 2 eggs
- ½ cup Greek yogurt (adds protein & Mediterranean creaminess)
- ¼ cup milk (or almond milk)
- 2 tbsp olive oil (or melted butter)
- 2 tbsp honey (or date syrup)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of salt
- 2 tbsp sunflower seeds (or chopped nuts – walnuts, almonds, pistachios)
Instructions
- Prepare the Oats
- Blend oats into a fine flour.
- Mix the Batter
- In a bowl, whisk eggs, yogurt, milk, honey, olive oil, and vanilla.
- Add oat flour, baking powder, cinnamon, and salt.
- Fold in grated apple and sunflower seeds (or nuts).
- Cook Pancakes
- Heat a non-stick skillet with a touch of olive oil.
- Pour batter in small rounds.
- Cook 2–3 minutes per side until golden and fluffy.
- Serve Mediterranean Style
- Drizzle with honey or date syrup.
- Top with Greek yogurt, fresh figs, pomegranate seeds, or a sprinkle of chopped pistachios.
- Add a squeeze of lemon for brightness.
