Marinated Lemon Garlic Brussels Sprouts

Ingredients:

  • 1 lemon
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 1 pound Brussels sprouts, trimmed and halved or quartered

Instructions:

  1. In a gallon-sized zip-top bag, squeeze the juice of one lemon.
  2. Add olive oil, black pepper, paprika, and garlic salt to the bag.
  3. Place the trimmed and halved Brussels sprouts into the bag, seal it tightly, and toss them around until well coated with the marinade.
  4. Refrigerate the bag of marinated Brussels sprouts overnight to allow the flavors to meld.
  5. When ready to cook, preheat your oven to 400°F (200°C).
  6. Spread the marinated Brussels sprouts evenly on a baking sheet lined with parchment paper or a silicone baking mat.
  7. Roast the Brussels sprouts in the preheated oven for 15-20 minutes, or until they are tender and golden brown, stirring halfway through the cooking time for even browning.
