Low Point Traditional Old-Fashioned Pancakes
Ingredients:
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup unsweetened almond milk (or any milk of your choice)
1 large egg
1 tablespoon unsalted butter, melted
Cooking spray
Instructions:
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
In a separate bowl, beat the egg lightly, then add the unsweetened almond milk and melted unsalted butter. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Preheat a non-stick skillet or griddle over medium heat and lightly coat it with cooking spray.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Repeat with the remaining batter, spraying the skillet with cooking spray between batches as needed.
Serve the pancakes warm with your favorite toppings such as fresh berries, sliced bananas, sugar-free syrup, or a dollop of Greek yogurt.
