Ingredients:

  • 9 lasagna noodles, preferably whole wheat
  • 1 lb lean beef sirloin, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 8 oz mushrooms, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup reduced-fat shredded mozzarella cheese
  • 1 cup reduced-fat shredded cheddar cheese
  • 2 cups marinara sauce, homemade or store-bought
  • Cooking spray

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Cook the noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  3. Prepare the filling: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add thinly sliced beef sirloin and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside. In the same skillet, add sliced bell pepper, onion, and mushrooms. Cook until softened, about 5-6 minutes. Season with Italian seasoning, salt, and pepper.
  4. Assemble the lasagna: Spray a 9×13-inch baking dish with cooking spray. Spread a thin layer of marinara sauce on the bottom of the dish. Place 3 lasagna noodles on top of the sauce. Spread half of the cooked beef and vegetable mixture over the noodles. Sprinkle half of the shredded mozzarella and half of the shredded cheddar cheese on top. Repeat the layers with the remaining noodles, beef mixture, and cheeses. Finish with a layer of marinara sauce on top.
  5. Bake the lasagna: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for an additional 15 minutes, or until the cheese is bubbly and golden brown.
