Ingredients:
2 low-carb tortillas of choice
1/4 cup light butter or margarine (very soft)
1 Tbsp minced garlic
1 Tbsp chopped parsley
1 cup reduced-fat mozzarella cheese, shredded
Directions:
Prepare Garlic Butter Mixture: In a bowl, mix together the soft light butter, minced garlic, and chopped parsley until well combined.
Assemble the Cheese Fingers:

Place the second tortilla on top.
Repeat the process with the remaining garlic butter mixture and mozzarella cheese on the second tortilla.
Cooking Method:
Preheat your air fryer to 375°F (190°C).
Place the assembled tortilla stack in the air fryer basket. Cook for about 5 minutes, until the tortillas are crisp and the cheese is melted.

Optionally, finish by placing them under the broiler for 2-3 minutes to get a golden brown crust.
