Low-Point French Onion Soup

Ingredients:

  • 2 teaspoons olive oil
  • 4 large onions, thinly sliced
  • 4 cups low-sodium beef broth (or vegetable broth for a vegan option)
  • 2 cups water
  • 2 teaspoons Worcestershire sauce (use vegan Worcestershire sauce for a vegan option)
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 slices of whole grain bread (choose a low-point option if available)
  • 1/2 cup shredded reduced-fat Swiss cheese

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
  2. Add the low-sodium beef broth (or vegetable broth), water, Worcestershire sauce, dried thyme, salt, and pepper to the pot with the caramelized onions. Bring the mixture to a simmer and cook for an additional 10-15 minutes to allow the flavors to meld.
  3. While the soup is simmering, preheat the broiler in your oven.
  4. Ladle the soup into four oven-safe bowls. Top each bowl with a slice of whole grain bread and sprinkle with shredded reduced-fat Swiss cheese.
  5. Place the bowls under the broiler and broil for 1-2 minutes, or until the cheese is melted and bubbly.
  6. Carefully remove the bowls from the oven using oven mitts.
  7. Serve hot and enjoy!
