Low-Point Almond Joy Brownie Bars

Ingredients:

  • 8 oz. sugar-free brownie mix
  • 1 egg
  • 5 tbsp unsweetened applesauce
  • 3 oz. sugar-free semi-sweet chocolate chips, divided
  • 32 grams (½ cup) unsweetened shredded coconut
  • 25 grams sliced almonds

Instructions:

  1. Preheat Oven: Set your oven to 350°F (175°C). Line an 8×8-inch non-stick baking pan with parchment paper, ensuring the edges hang over the sides for easy lifting later.
  2. Prepare Brownie Batter: In a large mixing bowl, combine the sugar-free brownie mix, egg, and unsweetened applesauce. Stir until the mixture is smooth and well blended.
  3. Add Chocolate Chips: Stir in 1 oz. of the sugar-free semi-sweet chocolate chips into the brownie batter. This will ensure chocolate chips are distributed throughout the brownies.
  4. Pour and Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 5 minutes. This initial baking step helps to set the base layer.
  5. Add Toppings: After 5 minutes, remove the baking pan from the oven. Sprinkle the remaining 2 oz. of chocolate chips evenly over the partially baked brownie. Then, sprinkle the unsweetened shredded coconut, followed by the sliced almonds on top.
  6. Finish Baking: Return the baking pan to the oven and continue baking for an additional 15-20 minutes. I baked mine for 20 minutes, but you should check for doneness by inserting a toothpick into the center. If it comes out clean or with just a few moist crumbs, the brownies are ready.
  7. Cool and Slice: Remove the baking pan from the oven and let the brownies cool in the pan for 10-15 minutes. This cooling period helps the brownies to set. Once cooled, lift the brownies out of the pan using the parchment paper overhang and place them on a cutting board. Slice into 12 equal bars.

The App does have “Unsweetened Shredded Coconut” at 6 points for 32 grams, I wish I could of just used that but the coconut I have is 11 points for 32 grams 🙁. If you can find a lower point coconut let me know which brand it is. I would love to get these brownie bars to 3 points.

  2. Combine Brownie Mix, Egg and Applesauce, stir in 1 oz. of chocolate chips. Pour and spread evenly into baking pan. Bake 5 minutes, remove from oven. Sprinkle with remaining 2oz. of chocolate chips, then add coconut and finally almonds.
  3. Bake 15-20 minutes. I did 20. Remove from oven and let cool 10-15 minutes. Lift out of pan and slice.
