Low Carb Heaven on Earth Cake

Ingredients:

For the Cake:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar substitute (such as erythritol or stevia)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract

For the Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar substitute (such as powdered erythritol)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the almond flour, cocoa powder, granulated sugar substitute, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs with the almond milk, melted coconut oil, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
  5. Pour the batter into the prepared baking pan and spread it out evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the frosting. In a mixing bowl, beat the softened cream cheese with the powdered sugar substitute, heavy cream, and vanilla extract until smooth and creamy.
  8. Once the cake is baked, remove it from the oven and let it cool completely in the pan.
  9. Once the cake has cooled, spread the frosting evenly over the top.
