Ingredients:

  • 1 head cauliflower, grated
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sugar-free marinara sauce
  • 1/2 cup shredded mozzarella cheese (for topping)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, microwave the grated cauliflower for 5 minutes until tender. Allow it to cool slightly.
  3. Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a large mixing bowl, combine the squeezed cauliflower, eggs, shredded mozzarella cheese, minced garlic, dried oregano, garlic powder, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture evenly onto the prepared baking sheet, forming a rectangular shape about 1/4 inch thick. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and set.
  6. Remove the crust from the oven and sprinkle the grated Parmesan cheese evenly over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Once the crust is done, spread the sugar-free marinara sauce evenly over the top. Sprinkle with the remaining shredded mozzarella cheese.
  8. Place the pizza back in the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh basil leaves if desired.
