
Ingredients:
- 1 head cauliflower, grated
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup sugar-free marinara sauce
- 1/2 cup shredded mozzarella cheese (for topping)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a microwave-safe bowl, microwave the grated cauliflower for 5 minutes until tender. Allow it to cool slightly.
- Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large mixing bowl, combine the squeezed cauliflower, eggs, shredded mozzarella cheese, minced garlic, dried oregano, garlic powder, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture evenly onto the prepared baking sheet, forming a rectangular shape about 1/4 inch thick. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and set.
- Remove the crust from the oven and sprinkle the grated Parmesan cheese evenly over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Once the crust is done, spread the sugar-free marinara sauce evenly over the top. Sprinkle with the remaining shredded mozzarella cheese.
- Place the pizza back in the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh basil leaves if desired.
