Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup unsweetened almond milk (or any unsweetened nut milk)
- 2 tablespoons melted butter or coconut oil
- 1/4 cup diced green onions (optional)
- Cooking oil (for frying)
Instructions:
- In a mixing bowl, whisk together the almond flour, coconut flour, baking powder, and salt until well combined.
- In a separate bowl, beat the eggs. Then add the almond milk and melted butter or coconut oil, and whisk until smooth.
- Pour the wet ingredients into the dry ingredients and mix until a thick batter forms. If using, stir in the diced green onions.
- Heat cooking oil in a frying pan over medium heat. Make sure the oil is hot but not smoking.
- Using a spoon or cookie scoop, carefully drop spoonfuls of the batter into the hot oil, shaping them into fritters if desired.
- Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
- Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to drain any excess oil.
- Serve the fried cornbread fritters warm as a side dish or appetizer.
