Low-Carb Fried Cornbread Fritters

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any unsweetened nut milk)
  • 2 tablespoons melted butter or coconut oil
  • 1/4 cup diced green onions (optional)
  • Cooking oil (for frying)

Instructions:

  1. In a mixing bowl, whisk together the almond flour, coconut flour, baking powder, and salt until well combined.
  2. In a separate bowl, beat the eggs. Then add the almond milk and melted butter or coconut oil, and whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until a thick batter forms. If using, stir in the diced green onions.
  4. Heat cooking oil in a frying pan over medium heat. Make sure the oil is hot but not smoking.
  5. Using a spoon or cookie scoop, carefully drop spoonfuls of the batter into the hot oil, shaping them into fritters if desired.
  6. Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
  7. Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to drain any excess oil.
