Low-Carb Butter Swim Biscuits

Ingredients:

  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese (optional)
  • 2 tablespoons melted butter, for brushing

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, baking powder, and salt until well combined.
  3. Add the melted butter, eggs, and sour cream to the dry ingredients. Mix until a thick dough forms. If desired, fold in shredded cheddar cheese for added flavor.
  4. Divide the dough into 8 equal portions and shape each portion into a ball. Place the balls of dough onto the prepared baking sheet, leaving some space between each biscuit.
  5. Using your fingers or the back of a spoon, gently press down on each ball of dough to flatten it slightly.
  6. Brush the tops of the biscuits with melted butter.
  7. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top and cooked through.
  8. Remove from the oven and let cool slightly before serving.
