
Low-Carb Broccoli Chicken Divan
Ingredients:
- 1 lb boneless, skinless chicken breasts, cooked and diced
- 4 cups fresh broccoli florets, steamed
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
- Arrange the steamed broccoli florets evenly on the bottom of the prepared baking dish.
- In a mixing bowl, whisk together the heavy cream, shredded cheddar cheese, grated Parmesan cheese, minced garlic, Dijon mustard, onion powder, salt, and pepper until well combined.
- Place the cooked and diced chicken evenly on top of the broccoli in the baking dish.
- Pour the cream and cheese mixture over the chicken and broccoli, spreading it out to cover everything evenly.
- Bake in the preheated oven for 20-25 minutes, or until the mixture is bubbly and the cheese is melted and lightly golden brown on top.
- Remove from the oven and let it cool for a few minutes before serving.
- Serve the low-carb broccoli chicken divan hot as a main dish.
