Low-Carb Broccoli Chicken Divan

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cooked and diced
  • 4 cups fresh broccoli florets, steamed
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
  2. Arrange the steamed broccoli florets evenly on the bottom of the prepared baking dish.
  3. In a mixing bowl, whisk together the heavy cream, shredded cheddar cheese, grated Parmesan cheese, minced garlic, Dijon mustard, onion powder, salt, and pepper until well combined.
  4. Place the cooked and diced chicken evenly on top of the broccoli in the baking dish.
  5. Pour the cream and cheese mixture over the chicken and broccoli, spreading it out to cover everything evenly.
  6. Bake in the preheated oven for 20-25 minutes, or until the mixture is bubbly and the cheese is melted and lightly golden brown on top.
  7. Remove from the oven and let it cool for a few minutes before serving.
  8. Serve the low-carb broccoli chicken divan hot as a main dish.
