Lighter Instant Pot Italian Sausage And Tortellini Soup

INGREDIENTS:

1 to 1.25 lbs lean hot Italian sausage, casings removed, you may substitute with sweet Italian sausage
1 medium onion, diced finely
3 to 4 cloves of garlic, minced
15 oz can tomato sauce
4 teaspoons Better than Bouillon chicken stock base dissolved in 4 cups of hot water, or 1-quart, less-sodium chicken stock or broth
9 oz package refrigerated whole wheat cheese tortellini
2 oz baby spinach, can add more if you like
3/4th to 1 cup reduced-fat milk (or your preferred milk alternative)
2 tablespoons olive oil
Grated parmesan cheese, as required, optional
INSTRUCTIONS:

Set your Instant Pot to sauté mode and heat the olive oil. Add the diced onions and cook until they become translucent, about 2-3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
Add the Italian sausage (either lean hot or sweet) and cook until it’s browned, breaking it into crumbles as it cooks. This should take around 5-7 minutes.
Stir in the tomato sauce and dissolved Better than Bouillon chicken stock base (or chicken stock or broth). Bring the mixture to a simmer.
Add the refrigerated whole wheat cheese tortellini to the pot. Close the Instant Pot lid and set it to High Pressure for 3 minutes.
After the cooking is complete, allow for a quick pressure release.
Stir in the baby spinach and allow it to wilt in the hot soup.
Finish the soup by stirring in 3/4th to 1 cup of reduced-fat milk (or your preferred milk alternative) to achieve your desired creaminess.
