Lightened-Up Old-Fashioned Bread Pudding with Vanilla Sauce

Bread Pudding:

Ingredients:

  • 8 slices whole wheat bread, cut into cubes
  • 2 cups unsweetened almond milk (or any other low-fat milk)
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Cooking spray

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Lightly coat an 8×8-inch baking dish with cooking spray.
  3. In a large mixing bowl, whisk together the almond milk, eggs, applesauce, honey or maple syrup, vanilla extract, cinnamon, and nutmeg until well combined.
  4. Add the bread cubes to the bowl, stirring gently to ensure all bread cubes are coated with the liquid mixture.
  5. Let the mixture sit for about 10-15 minutes to allow the bread to absorb the liquid.
  6. Transfer the bread mixture into the prepared baking dish, spreading it out evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the pudding is set and golden brown on top.
  8. Remove from the oven and let it cool for a few minutes before serving.

Vanilla Sauce:

Ingredients:

  • 1 cup unsweetened almond milk (or any other low-fat milk)
  • 2 tablespoons cornstarch
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions:

  1. In a small saucepan, whisk together the almond milk and cornstarch until the cornstarch is dissolved.
  2. Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly.
  3. Once the mixture has thickened, remove it from the heat and stir in the honey or maple syrup and vanilla extract.
  4. Let the sauce cool slightly before serving.
