  • 200 grams (7 oz) of spaghetti
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of half a lemon (about 2 tablespoons)
  • 1/4 cup sliced olives (green or black, as preferred)
  • 1 tablespoon fresh herbs (basil, parsley, or a mix)
  • Salt and pepper to taste

Instructions:

  1. Cook the Spaghetti:
    • Bring a large pot of salted water to a boil.
    • Add the spaghetti and cook according to the package instructions until al dente.
    • Drain the pasta, reserving about 1/2 cup of the pasta water.
  2. Prepare the Garlic Olive Oil:
    • While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over low heat.
    • Add the minced garlic and cook slowly, stirring frequently, until the garlic is golden and fragrant (about 3-5 minutes). Be careful not to burn the garlic.
  3. Combine and Serve:
    • Add the cooked spaghetti to the skillet with the garlic oil. Toss to coat the spaghetti in the oil.
    • Add the lemon juice and toss again. If the pasta seems dry, add a bit of the reserved pasta water until you reach the desired consistency.
    • Stir in the sliced olives and fresh herbs.
    • Season with salt and pepper to taste.
    • Serve immediately.
