  • 3 cloves garlic, minced โ€“ 0 points
  • 1 lemon, thinly sliced
  • 1 tbsp lemon juice
  • Salt & pepper, to taste
  • 1 tsp dried parsley or Italian herbs
  • Optional veggies (0 points):
    • Asparagus
    • Zucchini slices

    • Broccoli florets

  1. Preheat oven to 400ยฐF (200ยฐC) or heat grill to medium.
  2. Cut 4 large pieces of foil (or parchment), enough to wrap each salmon fillet.
  3. Place salmon in the center of each foil sheet. Top with:
    • ยฝ tbsp light butter
    • 1 clove garlic
    • A few lemon slices
    • Salt, pepper, and herbs
  4. Add optional veggies around the salmon if using.
  5. Drizzle a little lemon juice over each.
  6. Fold foil into packets, sealing edges tightly.
  7. Bake for 15โ€“20 minutes or until salmon flakes easily with a fork.
    • On grill: Cook for 12โ€“15 minutes, flipping once halfway through.
