- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt

Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease the cups.
- Prepare Wet Ingredients: In a large mixing bowl, combine the grated zucchini, unsweetened applesauce (or Greek yogurt), coconut oil, almond milk, eggs (or flax eggs), and sugar-free syrup (or erythritol). Mix until well combined.
- Combine Dry Ingredients: In a separate bowl, mix the almond flour, baking powder, baking soda, ground cinnamon, ground nutmeg, salt, and ground black pepper.
- Mix Ingredients Together: Add the dry ingredients to the wet ingredients and stir until the dry ingredients are fully incorporated into the batter.
- Optional Add-ins: If desired, fold in any optional add-ins such as chopped nuts, unsweetened coconut flakes, or sugar-free chocolate chips.
- Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Cool: Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
