Keto Tuna-Stuffed Cucumber Bites with Hard-Boiled Egg

Indulge in the savory flavors of our Keto Tuna-Stuffed Cucumber Bites with Hard-Boiled Egg, a delightful low-carb alternative to traditional tuna salad. This recipe combines the richness of tuna with the crunch of fresh cucumber and the creaminess of hard-boiled egg, making it the perfect keto-friendly option for a satisfying lunch or snack. Let’s explore how to create this delicious and nutritious dish.

1 large English cucumber
1 can of tuna in water, drained
1/4 cup diced red onion
1/4 cup diced celery
2 tablespoons mayonnaise (preferably keto-friendly)
1 tablespoon Worcestershire sauce (ensure it’s low-carb)
1 teaspoon lemon pepper seasoning
2 hard-boiled eggs, sliced
Salt and pepper to taste
Fresh parsley or dill for garnish (optional)

Prepare the Cucumbers: Wash the cucumber thoroughly and pat it dry with a clean kitchen towel. Using a sharp knife, carefully slice the cucumber into rounds, about 1/2 inch thick. Using a small spoon or melon baller, scoop out the seeds from the center of each cucumber round to create a hollow space for the tuna filling. Set aside.

Make the Tuna Salad: In a mixing bowl, combine the drained tuna, diced red onion, diced celery, mayonnaise, Worcestershire sauce, and lemon pepper seasoning. Stir until all ingredients are well combined. Taste and adjust seasoning with salt and pepper if needed.

Assemble the Cucumber Bites: Take each hollowed-out cucumber round and fill it with a spoonful of the tuna salad mixture, pressing gently to pack it in. Top each filled cucumber round with a slice of hard-boiled egg.

Garnish and Serve: If desired, garnish the assembled cucumber bites with fresh parsley or dill for a pop of color and flavor. Arrange the stuffed cucumber bites on a serving platter and serve immediately.
