Ingredients:-

  • 1 pound ground beef (or turkey/chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (or homemade blend) of taco seasoning (look for low-carb options or make your own with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper)
  • 1 can diced tomatoes, drained
  • 1 can chopped green chilies, drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup sour cream
  • Sliced avocado (optional)
  • Chopped fresh cilantro (optional)

Instructions:-

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until it’s browned. Add diced onions and garlic, and cook until onions are translucent.
  3. Stir in the taco seasoning, diced tomatoes, and green chilies. Let it simmer for a few minutes.
  4. Transfer the meat mixture into a baking dish and spread it evenly.
  5. Sprinkle shredded cheddar cheese on top of the meat mixture.
  6. Bake the casserole in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  7. Once done, remove it from the oven and let it cool slightly.
  8. Serve the taco casserole topped with shredded lettuce, dollops of sour cream, sliced avocado, and chopped cilantro if desired….
