Ingredients:-
- 1 pound ground beef (or turkey/chicken)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (or homemade blend) of taco seasoning (look for low-carb options or make your own with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper)
- 1 can diced tomatoes, drained
- 1 can chopped green chilies, drained
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup sour cream
- Sliced avocado (optional)
- Chopped fresh cilantro (optional)
Instructions:-
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until it’s browned. Add diced onions and garlic, and cook until onions are translucent.
- Stir in the taco seasoning, diced tomatoes, and green chilies. Let it simmer for a few minutes.
- Transfer the meat mixture into a baking dish and spread it evenly.
- Sprinkle shredded cheddar cheese on top of the meat mixture.
- Bake the casserole in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Once done, remove it from the oven and let it cool slightly.
- Serve the taco casserole topped with shredded lettuce, dollops of sour cream, sliced avocado, and chopped cilantro if desired….
