Ingredients:
- 6 medium bell peppers (any color)
- 1 lb ground beef (or ground turkey)
- 1 small onion, finely chopped
- 2 cups cauliflower rice (fresh or frozen)
- 1 cup diced tomatoes (no sugar added)
- 1/2 cup tomato sauce (no sugar added)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1 cup shredded cheddar cheese (or any preferred cheese)
- Salt and pepper to taste
- Olive oil (for cooking)
Instructions:
- Prepare the Bell Peppers:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Place the peppers upright in a baking dish.
- Cook the Filling:
- Heat olive oil in a skillet over medium heat.
- Add the onion and sauté until translucent.
- Add the ground beef and cook until browned.
- Stir in the cauliflower rice, diced tomatoes, tomato sauce, and seasonings (paprika, garlic powder, oregano, cumin, salt, and pepper).

- Cover the dish with aluminum foil and bake for 30 minutes.
