  • 6 medium bell peppers (any color)
  • 1 lb ground beef (or ground turkey)
  • 1 small onion, finely chopped
  • 2 cups cauliflower rice (fresh or frozen)
  • 1 cup diced tomatoes (no sugar added)
  • 1/2 cup tomato sauce (no sugar added)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1 cup shredded cheddar cheese (or any preferred cheese)
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions:

  1. Prepare the Bell Peppers:
    • Preheat your oven to 375°F (190°C).
    • Cut the tops off the bell peppers and remove the seeds and membranes.
    • Place the peppers upright in a baking dish.
  2. Cook the Filling:
    • Heat olive oil in a skillet over medium heat.
    • Add the onion and sauté until translucent.
    • Add the ground beef and cook until browned.
    • Stir in the cauliflower rice, diced tomatoes, tomato sauce, and seasonings (paprika, garlic powder, oregano, cumin, salt, and pepper).
    • Cook for 5-7 minutes until the mixture is heated through and the cauliflower rice is tender.
  3. Assemble and Bake:
    • Spoon the filling evenly into the prepared bell peppers.
    • Sprinkle shredded cheese on top of each pepper.
    • Cover the dish with aluminum foil and bake for 30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
