- In the slow cooker, combine the chicken, diced carrots, celery, onion, minced garlic, dried thyme, dried parsley, salt, and pepper.
- Pour in the chicken broth and stir to combine all the ingredients.
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and vegetables are tender.
- About 30 minutes before serving, shred the chicken using two forks.
- In a saucepan over medium heat, melt the butter. Add coconut flour or almond flour to make a roux. Cook for a minute or two to eliminate the raw flour taste.
