Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare Chicken:
- Season chicken breasts with salt and pepper. In a skillet over medium-high heat, heat olive oil. Sear the chicken on both sides until golden brown. It’s okay if the chicken is not fully cooked at this stage, as it will continue cooking in the oven. Remove from the skillet and set aside.
- Slice Chicken:
- Once the chicken has cooled slightly, slice it into bite-sized pieces.
- Assemble Casserole:
- In a baking dish, spread a layer of sugar-free marinara or pizza sauce.
- Add Chicken:
- Place the sliced chicken on top of the sauce.
- Sprinkle Cheese:
- Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the chicken.
- Season:
