Instead of a traditional bread bun, we’re using thick roasted cabbage slices that get tender in the center and deliciously crispy on the edges. Layered with seasoned ground beef, tomato sauce, and melted cheese, this low-carb recipe delivers all the flavor of a burger night minus the carb crash.

🛒 Ingredients (Serves 4)
- 1 medium head of green cabbage, cut into 1-inch-thick slices
- 1 lb ground beef (80–85% lean works well for keto)
- 1/2 cup sugar-free tomato sauce or crushed tomatoes
- 1/2 cup shredded cheese (mozzarella, Monterey Jack, or cheddar), divided
- 1 tsp grated garlic
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp red chili flakes (optional, for heat)
- 1/2 cup chopped green onion
- 1/2 cup fresh chopped parsley
- 1–2 tbsp olive oil or avocado oil (for brushing cabbage)
Instructions
1. Prep & Roast the Cabbage
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. Arrange cabbage slices in a single layer, brush both sides with olive oil, and season lightly with salt and pepper.
Roast for 10 minutes, until the cabbage begins to soften but still holds its shape.
2. Mix & Shape the Patties
While the cabbage is roasting, mix ground beef with garlic, green onions, parsley, red chili flakes, half of the shredded cheese, salt, and pepper. Form into 4 even patties.
3. Assemble the Burgers
Remove the cabbage from the oven. Top each slice with a spoonful of sugar-free tomato sauce, a beef patty, a sprinkle of the remaining cheese, and a bit more tomato sauce if desired.
4. Bake to Finish
Return the tray to the oven and bake for 10–12 minutes, or until the patties are cooked through and the cheese is bubbly and golden.
5. Serve Hot
Garnish with extra parsley or serve with a side of avocado slices or cauliflower mash. Dig in and enjoy!
