Ingredients
For the Crust:
1 cup almond flour
2 tbsp granulated erythritol or other keto-friendly sweetener
1/4 cup melted butter
For the Cheesecake Filling:
16 oz (2 cups) cream cheese, softened
1/2 cup sour cream
1/2 cup granulated erythritol or other keto-friendly sweetener
2 large eggs
1 tsp vanilla extract
8-10 keto-friendly chocolate sandwich cookies (such as keto Oreos), crushed
Instructions
Preheat Oven: Preheat your oven to 325°F (163°C). Line a muffin tin with paper liners or use a silicone muffin pan.
Prepare the Crust:
In a bowl, combine the almond flour, erythritol, and melted butter. Mix until well combined.
Press the mixture into the bottom of each muffin tin cup to form the crust. Use the back of a spoon or a flat-bottomed glass to press it down firmly.
Bake for 8 minutes, then remove from the oven and let it cool slightly.

Prepare the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the sour cream, erythritol, eggs, and vanilla extract. Beat until well combined and smooth.
Gently fold in the crushed keto-friendly cookies.
Assemble:
Spoon the cheesecake filling over the partially baked crusts in the muffin tin.
Smooth the tops with a spatula.
Bake:
Bake in the preheated oven for 18-22 minutes, or until the centers are set and the edges are slightly golden.
Turn off the oven and leave the cheesecakes inside with the door slightly ajar for 1 hour. This helps to prevent cracking.
Chill:
After the hour, remove the cheesecakes from the oven and let them cool to room temperature.
Refrigerate for at least 2-3 hours, or overnight, before serving to allow them to firm up.
Serve:
Remove the cheesecakes from the muffin tin and peel off the paper liners if used.
