These beautiful layered fat bombs pack the flavors of chocolate, vanilla, and strawberry into one delicious bite. Perfect for a quick snack or dessert, these low-carb treats are a great way to fuel up on healthy fats while staying in ketosis.

Ingredients:

Chocolate Layer:

  • 1/2 cup coconut oil (melted)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol (or your preferred keto sweetener)
  • 1 tsp vanilla extract

Vanilla Layer:

  • 1/2 cup coconut oil (melted)
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream (or coconut cream for dairy-free)

Strawberry Layer:

  • 1/2 cup coconut oil (melted)
  • 1/4 cup powdered erythritol
  • 1/4 tsp strawberry extract (adjust for more flavor if needed)
  • A few drops of natural pink or red food coloring (optional)

Instructions:

1. Prepare the Chocolate Layer:

  • In a medium bowl, whisk together melted coconut oil, cocoa powder, powdered erythritol, and vanilla extract until smooth.
  • Pour this chocolate mixture into the bottom of a silicone mold or a parchment-lined baking dish (an 8×8 pan works well).
  • Freeze the chocolate layer for about 15 minutes, or until firm.

2. Prepare the Vanilla Layer:

  • In another bowl, combine the melted coconut oil, powdered erythritol, vanilla extract, and heavy cream. Mix well until smooth.
  • Once the chocolate layer is firm, pour the vanilla mixture over it. Spread evenly with a spatula.
  • Freeze for another 15 minutes, or until the vanilla layer is set.

3. Prepare the Strawberry Layer:

  • In a clean bowl, mix melted coconut oil, powdered erythritol, strawberry extract, and food coloring (if using). Stir until everything is well combined.
  • Pour this mixture over the firm vanilla layer, smoothing it out.
  • Freeze the entire fudge for at least 30 minutes or until all layers are completely set.

4. Cut and Serve:

  • Once set, remove the layered fudge from the mold or pan. Cut into small squares.
  • Store the fudge in an airtight container in the freezer, as the coconut oil can soften at room temperature.

Tips for Best Results:

  • Layer Thickness: You can adjust the thickness of each layer to your liking by increasing or decreasing the ingredients for each flavor.
  • Dairy-Free Option: Substitute the heavy cream with coconut cream if you’re following a dairy-free keto diet.
  • Sweetener Adjustments: Powdered erythritol blends easily, but you can use other sweeteners like monk fruit or allulose if preferred. Adjust sweetness according to your taste.
