Keto Mashed “Potatoes” (made with cauliflower)

This is the best thing I’ve eaten in the month that I’ve been doing keto. I’ve been craving comfort foods more than sweets and this hit the spot!

Take a half head of cauliflower, chop it up and boil it with some heavy cream and a little water, two Tbs of butter, a clove or two of garlic and salt and pepper. Simmer covered til tender, about 10 minutes.

Then either put it in a blender, food processor or use an immersion blender and blend til creamy. I have a vitamix and it works great!

You’d never know it wasn’t real mashed potatoes. My teenager was trying the leftovers and asked how I got the potatoes so creamy! 😅😁😍
