Keto Lemon Mug Cake with Lemon Glaze Recipe:

INGREDIENTS:

Lemon Mug Cake:

  • 1 tbsp butter, melted
  • 3 tbsp almond flour, packed
  • ½ tsp baking powder
  • 1 tbsp sweetener (use your sweetener of choice, I used granular monkfruit in this one)
  • 3 tbsp egg whites (OR 1 egg white)
  • 1 tsp lemon juice
  • 1/8-1/4 tsp lemon zest

Lemon Glaze:

  • 1 tbsp cream cheese, softened
  • 1 tbsp powdered sweetener (you can use granular too)
  • 1 tbsp heavy cream
  • 1 tsp lemon juice
  • 1/8 tsp lemon zest (if you want hints of lemon, use less zest)

DIRECTIONS:

  1. Add ingredients for mug cake into a mug, mix thoroughly and microwave for 1 min 20 secs!
  2. For the glaze, mix until well combined!
