Full Recipe:
Ingredients:
1/2 cup unsalted butter, melted
1/2 cup granulated erythritol or any keto-friendly sweetener
3 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1/3 cup coconut flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar-free chocolate chips (optional)
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
Mix Wet Ingredients:
In a large bowl, combine melted butter and granulated erythritol. Mix well until the sweetener is dissolved.
Add Eggs and Vanilla:
Add the eggs and vanilla extract to the butter mixture. Beat until the mixture is well combined and slightly fluffy.
Incorporate Dry Ingredients:
In a separate bowl, whisk together cocoa powder, coconut flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until smooth and well combined.
Fold in Chocolate Chips (Optional):
If using sugar-free chocolate chips, gently fold them into the brownie batter.
Transfer to Baking Pan:
Pour the brownie batter into the prepared baking pan, spreading it evenly.
Bake:
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out with moist crumbs. Be cautious not to overbake to keep the brownies fudgy.
Cool:
Allow the brownies to cool in the pan for at least 15-20 minutes before transferring them to a wire rack to cool completely.
Slice and Serve:
Once cooled, slice the Keto Coconut Flour Brownies into squares. Serve and enjoy!
