- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the egg whites from the yolks, placing them in two different mixing bowls.
- To the bowl with egg yolks, add the softened cream cheese. Mix until smooth and well combined. If using sweetener, add it to this mixture.
- In the bowl with egg whites, add the cream of tartar. Using a hand mixer or stand mixer, whip the egg whites until stiff peaks form. This might take a few minutes.
- Gently fold the egg yolk and cream cheese mixture into the whipped egg whites. Be very delicate to preserve the volume of the whipped egg whites.
- Spoon the mixture onto the prepared baking sheet, forming rounds about 3-4 inches in diameter to create the cloud bread.
- Bake in the preheated oven for about 25-30 minutes or until the cloud bread is golden and firm to the touch.
- Remove from the oven and let them cool for a few minutes before enjoying!
