  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks, placing them in two different mixing bowls.
  3. To the bowl with egg yolks, add the softened cream cheese. Mix until smooth and well combined. If using sweetener, add it to this mixture.
  4. In the bowl with egg whites, add the cream of tartar. Using a hand mixer or stand mixer, whip the egg whites until stiff peaks form. This might take a few minutes.
  5. Gently fold the egg yolk and cream cheese mixture into the whipped egg whites. Be very delicate to preserve the volume of the whipped egg whites.
  6. Spoon the mixture onto the prepared baking sheet, forming rounds about 3-4 inches in diameter to create the cloud bread.
  7. Bake in the preheated oven for about 25-30 minutes or until the cloud bread is golden and firm to the touch.
  8. Remove from the oven and let them cool for a few minutes before enjoying!
