EQUIPMENT:
- Two medium Bowls.
- A small bowl.
INGREDIENTS:
FAT-HEAD DOUGH FOR PRETZEL BYTES:
- One-fourth cup of coconut flour
- 1 teaspoon of baking powder
- Shredded part-skim mozzarella cheese, 160 grams.
- 2 Tbsp. of Swerve Sweetener, Powdered
- One-fourth teaspoon of xanthan gum
- 1 lightly whisked egg, Large
CINNAMON COATING:
- One and a Half tsp. of Cinnamon, Powdered.
- Granular Swerve or Allulose, 3 tablespoons.
- Three tbsp. of melted butter.
CREAM CHEESE DIP:
- Normal temperature Heavy Cream, 3 Tbsp.
- 85 grams of softened cream cheese.
- Half a teaspoon of Vanilla essence.
- 2 Tablespoons of swerve sweetener, Powdered.
INSTRUCTIONS:
Make the eight-inch log out of a single portion and divide it into 1-inch pieces
In a heatproof bowl, melt the mozzarella cheese in the microwave.
Meanwhile, mix all the dry ingredients like baking powder, sweetener, xantham gum, and coconut flour.
Add the dry ingredients and mix in the melted Mozzarella cheese, then add the egg and fold with a spatula. Knead the mixture till it gets the dough consistency.
Take the dough out of the Bowl and place it on your work surface where you can easily knead it by sprinkling it with coconut flour as required till the dough becomes non-sticky.
Make the four portions of dough.
