  • 1 teaspoon vanilla extract

For the Cinnamon Filling:

  • 1/4 cup melted butter
  • 3 tablespoons granulated low-carb sweetener
  • 1 tablespoon ground cinnamon

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered low-carb sweetener
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
  2. In a large bowl, combine almond flour, coconut flour, sweetener, baking powder, and salt.
  3. In a separate bowl, whisk together melted butter, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Place the dough between two sheets of parchment paper and roll it into a rectangle.
  6. For the cinnamon filling, mix together melted butter, sweetener, and ground cinnamon. Spread this mixture evenly over the rolled-out dough.
  7. Carefully roll the dough into a log, starting from one of the longer sides.
  8. Slice the log into rolls, about 1 inch thick.

  11. While the rolls are baking, prepare the cream cheese frosting. In a bowl, beat together softened cream cheese, powdered sweetener, and vanilla extract until smooth.
