Ingredients:

  • 1 cup steamed broccoli florets
  • 1 cup steamed mixed vegetables (carrots, corn, green beans, and peas)
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons sugar-free sweet chili sauce (G Hughes Sweet Chili Sugar Free Dipping Sauce)
  • 1 tablespoon sugar-free Thai chili sauce (G Hughes Sugar Free Thai Chili Wing Sauce)
  • 3 ounces grilled skinless boneless chicken breast

Instructions:

  1. Prepare the Cauliflower Rice:
    • Cook the cauliflower rice according to package instructions until tender. Set aside.
  2. Steam the Vegetables:
    • Steam the broccoli florets and mixed vegetables until they are tender. Set aside.
  3. Cook the Chicken:
    • Grill or cook the skinless boneless chicken breast until it’s fully cooked and no longer pink in the center. Once cooked, slice or chop the chicken into bite-sized pieces.
  4. Prepare the Stir Fry Sauce:
    • In a small bowl, mix together the low-sodium soy sauce, sugar-free sweet chili sauce, and sugar-free Thai chili sauce. Set aside.
  5. Assemble the Stir Fry:
    • In a large skillet or wok over medium heat, add the cooked cauliflower rice, steamed broccoli florets, steamed mixed vegetables, and grilled chicken pieces.
    • Pour the stir fry sauce over the ingredients in the skillet.
    • Stir well to coat everything evenly in the sauce.
    • Cook for an additional 2-3 minutes, stirring occasionally, until everything is heated through and the flavors are well combined.
  6. Serve:
