INGREDIENT 

  • 1 pound ground chicken 96% lean or lean ground turkey
  • 1 large egg
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp Italian seasoning
  • 1 tbsp chopped parsley

Cream Sauce Ingredients:

  • 1 tablespoon of Salted Butter
  • 1 cup of Beef Stock
  • ½ cup of Heavy Cream
  • 1 teaspoon of Mustard Powder
  • ½ teaspoon of Nutmeg, ground
  • ¼ teaspoon of Pepper, ground
  • ½ teaspoon of Xanthan Gum
  • ½ teaspoon of Salt
  • 1 tablespoon of Parsley, chopped

INSTRUCTIONS 

  1. Preheat the oven to 390F/ 195C. Spray a sheet pan with cooking spray.
  2. In a large bowl, add the ground chicken, egg, almond flour, grated parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix just until well combined.
  3. Shape 16 1 inch sized meatballs and place them in the prepared baking dish.
  4. Bake for 18-20 minutes, or until meatballs are cooked through. 
  5. In skillet Add the butter, then once melted, add the beef stock, cream, mustard powder, salt, pepper, and nutmeg. Whisk together.
  6. Bring to a simmer, then whisk in the xanthan gum. Continue to simmer until thick, about 8-12 minutes.
  7. Add the meatballs in and simmer for about 3 minutes, until the meatballs are hot.
  8. Sprinkle with parsley.
