The Keto Cheddar Leek Cauliflower Mash is probably the perfect low-carb meal with our keto cheddar leek carrot mash. Furthermore, it’s anything you could want with a low-carb cauliflower purée: cheesy, leaky (yes, it’s a thing lately), and extremely smooth and buttery.
Tips for making this recipe:
When grilled, they have a garlic flavor that is mild and slightly sweet, but they also have a delicate tone that typical onions just can’t match. Leeks typically have an overall length of between one and two inches, with a lower white half that turns to a deeper green stem towards the base. For this dish, we’re interested in the white and translucent green sections; the dark brown part remains highly fibrous and essentially unappealing.
Ingredients:
Heavy whipping cream: 1/4 cup.
Ground black pepper: 1/4 tsp.
Salt.
Ground mustard powder: 1 tsp.
Sliced leeks: 1 cup.
Cauliflower florets: 6 cups.
Shredded extra-sharp cheddar: 1 cup.
Black pepper: 1/4 tsp.
Butter: 1/2 cup
Instructions:
In a large microwave bowl, add the cauliflower, salt, pepper, and whipping cream.
Boil for ten seconds without cover. Dump it out and mix.
After six minutes have passed, or when the head of cauliflower is pliable, transfer it to your microwave.
In this period, use an enormous skillet over low to medium heat to melt the saturated fat.
Add those sliced leeks and simmer for about ten minutes. While they are tender and golden brown. Take off a tablespoon of the butter and leeks mixture and reserve it for garnish.
After cooking, transfer the cooked cauliflower to a large machine cup and process it there.
After adding the remaining butter and leek mix (except for the chunk that was set aside), coriander powder, and cheese made with cheddar, pulse for fifteen seconds. If required, add more pepper and salt to your liking after tasting.
Transfer to a serving platter and, if favors, top with parsley that has been minced and the remainder of the leek-mixed butter mixture. Warm up the food.
Notes:
The remaining food can be kept for as long as three months or kept in a cool place for up to a week inside a bag that is airtight.
