KETO CAULIFLOWER TATER TOTS
Ingredients:
2 cups of grated fresh cauliflower
1/4 cup of almond flour
1/4 cup of grated parmesan cheese
1 egg
1/4 teaspoon of garlic powder
Salt and pepper to taste
Oil for frying
Instructions:

Preheat the oven to 400°F and line a baking sheet with parchment paper.

In a large bowl, squeeze the excess moisture out of the grated cauliflower using a cheesecloth or a clean kitchen towel.

Add the almond flour, parmesan cheese, egg, garlic powder, salt and pepper to the cauliflower and mix well to combine.

Using a small cookie scoop or a tablespoon, form the mixture into tots and place them on the prepared baking sheet. You should get about 24 tots.

Bake for 15 minutes, flipping halfway through, until golden and firm.

Heat some oil in a skillet over medium-high heat. Fry the tots in batches until crisp and browned on all sides, turning occasionally. Drain on paper towels and serve hot with your favorite dipping sauce.
