Keto Cauliflower Casserole
Ingredients:
•1 large head of cauliflower, cut into florets
•4 oz cream cheese, softened
•1/2 cup sour cream
•1 tsp garlic powder
•1 tsp onion powder
•Salt and pepper, to taste
•1/4 cup grated Parmesan cheese
•1/4 cup bacon bits, divided
•1 cup shredded cheddar cheese


Instructions:


  1. Preheat oven to 375°F and grease a 9×13 inch baking dish.

  2. In a large pot of boiling water, cook the cauliflower florets until tender, about 15 minutes. Drain well and return to the pot.

  3. Using a potato masher or a whisk, mash the cauliflower until it reaches your desired consistency.

  4. Stir in the cream cheese, sour cream, garlic powder, onion powder, salt, pepper, Parmesan cheese, and half of the bacon bits. Mix well until smooth and creamy.

  5. Transfer the cauliflower mixture to the prepared baking dish and spread it evenly.

  6. Sprinkle the cheddar cheese and the remaining bacon bits over the top.

  7. Bake for 15 minutes or until the cheese is melted and bubbly.

  8. Enjoy as a side dish or a main course!
