Ingredients:-
For the cake:-
- 2 cups almond flour
- 1/2 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1/2 cup granulated erythritol or preferred keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1 1/2 cups grated carrots
- 1/2 cup chopped pecans or walnuts (optional)
For the frosting:-
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/2 cup powdered erythritol or preferred keto-friendly powdered sweetener
- 1 teaspoon vanilla extract
- Chopped nuts for garnish (optional)
Instructions:-
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat together the melted butter, eggs, granulated sweetener, and vanilla extract until well combined.
- Gradually add the wet ingredients into the dry ingredients, mixing until a smooth batter forms.
- Fold in the grated carrots and chopped nuts (if using) until evenly distributed in the batter.
- Pour the batter into the prepared cake pan and spread it out evenly.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan before removing.
For the frosting:-
- In a mixing bowl, beat together the softened cream cheese and butter until smooth.
- Add the powdered sweetener and vanilla extract, and continue beating until the frosting is creamy and well combined.
- Once the cake has cooled, spread the frosting evenly over the top.
- Optionally, garnish with chopped nuts on top of the frosting.
