Ingredients:-

For the cake:-

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1/2 cup granulated erythritol or preferred keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped pecans or walnuts (optional)

For the frosting:-

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered erythritol or preferred keto-friendly powdered sweetener
  • 1 teaspoon vanilla extract
  • Chopped nuts for garnish (optional)

Instructions:-

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat together the melted butter, eggs, granulated sweetener, and vanilla extract until well combined.
  4. Gradually add the wet ingredients into the dry ingredients, mixing until a smooth batter forms.
  5. Fold in the grated carrots and chopped nuts (if using) until evenly distributed in the batter.
  6. Pour the batter into the prepared cake pan and spread it out evenly.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool completely in the pan before removing.

For the frosting:-

  1. In a mixing bowl, beat together the softened cream cheese and butter until smooth.
  2. Add the powdered sweetener and vanilla extract, and continue beating until the frosting is creamy and well combined.
  3. Once the cake has cooled, spread the frosting evenly over the top.
  4. Optionally, garnish with chopped nuts on top of the frosting.
  5. Refrigerate the cake for about an hour before slicing and serving…
