  1. Toss the shrimp with Cajun seasoning in a bowl until evenly coated.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil if needed. Sauté the minced garlic for about 30 seconds until fragrant.
  4. Add the spiralized/shredded zucchini or spaghetti squash to the skillet and cook for 2-3 minutes until slightly softened.
