- 1 pound large shrimp, peeled and deveined
- 2-3 zucchinis or 1-2 spaghetti squash (spiralized or shredded)

- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream or coconut cream for a dairy-free option

- Toss the shrimp with Cajun seasoning in a bowl until evenly coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil if needed. Sauté the minced garlic for about 30 seconds until fragrant.
- Add the spiralized/shredded zucchini or spaghetti squash to the skillet and cook for 2-3 minutes until slightly softened.
- Toss in the cherry tomatoes and cook for an additional 1-2 minutes.
- Reduce the heat to medium-low and pour in the heavy cream or coconut cream. Stir gently and let it simmer for a few minutes until the sauce thickens slightly.
- Season the sauce with salt and pepper to taste.
- Add the cooked shrimp back into the skillet and stir to combine everything, letting it heat through for about a minute.
