Keto Cabbage and Ground Beef
Ingredients:
1 lb ground beef (80% lean or higher)
1 small head of cabbage, chopped
1 small onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (no added sugar)
2 tablespoons tomato paste
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup beef broth
Optional: 1/4 cup shredded cheddar cheese for topping
Instructions:
Cook the Ground Beef:
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the ground beef and cook until browned, breaking it up into crumbles as it cooks.
Once cooked, drain any excess fat and set the beef aside.
Cook the Vegetables:
In the same skillet, add the remaining tablespoon of olive oil.
Add the chopped onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another 30 seconds until fragrant.
Combine Ingredients:
Return the cooked ground beef to the skillet.
Add the chopped cabbage, diced tomatoes, tomato paste, beef broth, smoked paprika, cumin, oregano, chili powder, salt, and pepper.
Stir everything together until well combined.


Simmer:
Cover the skillet and let the mixture simmer over medium-low heat for 20-25 minutes, stirring occasionally, until the cabbage is tender.
Serve:
Serve hot, optionally topped with shredded cheddar cheese.
