Keto Cabbage and Ground Beef
Ingredients:

  • 1 lb ground beef (80% lean or higher)
  • 1 small head of cabbage, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no added sugar)
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup beef broth
  • Optional: 1/4 cup shredded cheddar cheese for topping

Instructions:

  1. Cook the Ground Beef:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the ground beef and cook until browned, breaking it up into crumbles as it cooks.
    • Once cooked, drain any excess fat and set the beef aside.
  2. Cook the Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Combine Ingredients:
    • Return the cooked ground beef to the skillet.
    • Add the chopped cabbage, diced tomatoes, tomato paste, beef broth, smoked paprika, cumin, oregano, chili powder, salt, and pepper.
    • Stir everything together until well combined.
  4. Simmer:
    • Cover the skillet and let the mixture simmer over medium-low heat for 20-25 minutes, stirring occasionally, until the cabbage is tender.
  5. Serve:
    • Serve hot, optionally topped with shredded cheddar cheese.
