Keto Cabbage and Ground Beef
Ingredients:
- 1 lb ground beef (80% lean or higher)
- 1 small head of cabbage, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (no added sugar)
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup beef broth
- Optional: 1/4 cup shredded cheddar cheese for topping
Instructions:
- Cook the Ground Beef:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it up into crumbles as it cooks.
- Once cooked, drain any excess fat and set the beef aside.
- Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Combine Ingredients:
- Return the cooked ground beef to the skillet.
- Add the chopped cabbage, diced tomatoes, tomato paste, beef broth, smoked paprika, cumin, oregano, chili powder, salt, and pepper.
- Stir everything together until well combined.
- Simmer:
- Cover the skillet and let the mixture simmer over medium-low heat for 20-25 minutes, stirring occasionally, until the cabbage is tender.
- Serve:
- Serve hot, optionally topped with shredded cheddar cheese.
