Since Keto, I’ve had to get creative in what I use in place of brown sugar and flour.
Thanks to the Oat Fiber that I use, the texture is absolutely perfect. Without adding carbs adds a very cake-like texture, just plenty of fiber! But, brands matter with Oat Fiber.

- Super fine almond flour
- Oat Fiber
- Swerve Confectioners
- Brown Swerve
- Blueberries
- Eggs
- Sour cream
- Heavy cream
- Grass-fed butter
- Baking powder
- Vanilla extract
- Lemon
- Walnuts
- Ground cinnamon
- Ground nutmeg
- Salt
INGREDIENTS
For the Loaf
- ▢1 ¾ cups super fine almond flour
- ▢¼ cup Oat Fiber , see notes
- ▢⅔ cup blueberries
- ▢3 eggs
- ▢½ cup sour cream
- ▢¼ cup heavy cream
- ▢½ cup swerve confectioners
- ▢2 teaspoons baking powder
- ▢1 ½ teaspoons vanilla extract
- ▢zest of 1 lemon
- ▢Pinch of salt
For the Crumb Topping
- ▢⅔ cup super fine almond flour
- ▢3 tablespoons walnuts, chopped
- ▢3 tablespoons grass fed butter, melted
- ▢¼ teaspoon ground cinnamon
- ▢¼ cup Brown Swerve
- ▢⅛ teaspoon ground nutmeg
INSTRUCTIONS
- Preheat oven to 325F.
- For the crumb topping, add all the ingredients to a bowl, except the butter and mix together.
- Pour in the melted butter and mix until it gets well combined, then put it aside.
- Add the salt, baking powder, oat fiber and flour to a bowl and whisk together, then put it aside.
- Except the blueberries, then add all the remaining ingredients, to a mixing bowl(large) and mix using a hand mixer for about Thirty seconds. Add in the dry ingredients and continue mixing.
- Fold in the blueberries gently, then pour into a nonstick loaf pan(9″ x 5″) that’s been sprayed with nonstick spray (prefer coconut oil spray). I would line it with parchment paper, if your pan isn’t nonstick. Using your spatula smooth the top and top with the reserved crumb topping.
- Bake for Forty Five to Fifty minutes or until when inserted a toothpick, comes out clean.
