Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine grated cheddar cheese, shredded mozzarella, almond flour, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
Microwave the cheese mixture for about 30 seconds to 1 minute or until the cheese melts.
Stir the mixture to ensure the melted cheese and almond flour are thoroughly mixed.
Place the mixture between two sheets of parchment paper and use a rolling pin to roll it out into a thin, even layer. The thickness of the layer will determine the crunchiness of the crackers.
Carefully remove the top layer of parchment paper.
Use a pizza cutter or sharp knife to cut the rolled out mixture into small squares or rectangles, creating the desired cracker size.
Transfer the parchment paper to the baking sheet with the sloppy mixture.
Bake the crackers in the preheated oven for about 10-15 minutes or until the edges are golden and crisp.
Once baked, remove the baking sheet from the oven and let the crackers cool for a few minutes, then transfer them to a wire rack to cool completely.
