Ingredients:

- 2 medium-sized zucchinis, peeled and grated
- 2 large eggs
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or your preferred keto-friendly sweetener
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- Coconut oil for frying
For the “Apple” Filling:
- 1 medium-sized Granny Smith apple (or another low-carb apple substitute), peeled and finely diced
- 1 tablespoon unsalted butter
- 1/2 teaspoon ground cinnamon
- 1 tablespoon granulated erythritol or your preferred sweetener
For Dusting (Optional):
- Confectioners’ erythritol or powdered sweetener
Instructions:
For the “Apple” Filling:
- In a skillet, melt the butter over medium heat.
- Add the diced apple, ground cinnamon, and sweetener.
- Cook the apple mixture until softened, about 5-7 minutes. Set aside to cool.
For the Fritters:
- Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.
- In a mixing bowl, combine the squeezed zucchini, eggs, almond flour, coconut flour, erythritol, baking powder, cinnamon, salt, and vanilla extract. Mix until well combined.
- Gently fold in the cooled apple filling.
- Heat coconut oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil, spreading them slightly to form fritters.
- Fry until the edges are golden brown, then flip and cook the other side until golden.
- Remove the fritters from the pan and place them on a paper towel to absorb any excess oil.
- Optional: Dust the fritters with confectioners’ erythritol or powdered sweetener.
