Ingredients:

  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or your preferred keto-friendly sweetener

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Coconut oil for frying

For the “Apple” Filling:

  • 1 medium-sized Granny Smith apple (or another low-carb apple substitute), peeled and finely diced
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon granulated erythritol or your preferred sweetener

For Dusting (Optional):

  • Confectioners’ erythritol or powdered sweetener

Instructions:

For the “Apple” Filling:

  1. In a skillet, melt the butter over medium heat.
  2. Add the diced apple, ground cinnamon, and sweetener.
  3. Cook the apple mixture until softened, about 5-7 minutes. Set aside to cool.

For the Fritters:

  1. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.
  2. In a mixing bowl, combine the squeezed zucchini, eggs, almond flour, coconut flour, erythritol, baking powder, cinnamon, salt, and vanilla extract. Mix until well combined.
  3. Gently fold in the cooled apple filling.
  4. Heat coconut oil in a frying pan over medium heat.
  5. Drop spoonfuls of the batter into the hot oil, spreading them slightly to form fritters.
  6. Fry until the edges are golden brown, then flip and cook the other side until golden.
  7. Remove the fritters from the pan and place them on a paper towel to absorb any excess oil.
  8. Optional: Dust the fritters with confectioners’ erythritol or powdered sweetener.
