Ingredients:
1 head of cauliflower, leaves removed
2 tablespoons unsalted butter (or dairy-free butter alternative for low-carb)
2 tablespoons olive oil
½ teaspoon salt (to taste)
¼ teaspoon black pepper (to taste)
1 teaspoon Italian seasonings (make sure they are low-carb)
2 cloves garlic, crushed
2-3 tablespoons grated Parmesan cheese (or dairy-free if needed)
Fresh parsley, finely chopped

Instructions:
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Cut and remove the leaves from the head of cauliflower. Also, remove the thick white stalk at the base of the cauliflower.
Step 3: In a small bowl, whisk together the melted butter, olive oil, salt, pepper, Italian seasonings, and crushed garlic.
Step 4: Place the cauliflower head in a dutch oven or a baking dish. Use a basting brush to coat it with ¾ of the butter and herb sauce. Reserve the remaining sauce.
Step 5: Cover the cauliflower head with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for an additional 10-20 minutes, or until the cauliflower is tender and lightly browned.
Step 6: Brush the remaining sauce over the cauliflower and sprinkle it with Parmesan cheese.
Step 7: Turn the oven to a high broil and broil for 3-5 minutes or until the cheese begins to turn a golden brown.
Step 8: Serve the roasted cauliflower with fresh parsley and additional grated Parmesan cheese if desired. Enjoy!
