Ingredients:

  • 1/2 cup unsalted butter
  • 1 cup granulated low-carb sweetener (e.g., erythritol or monk fruit)
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. In a saucepan over medium heat, melt the butter.
  2. Once the butter is melted, add the granulated sweetener and whisk continuously until it’s fully dissolved. This may take about 2-3 minutes.
  3. Slowly pour in the heavy cream while continuing to whisk the mixture. Be cautious as it may bubble up.
  4. Allow the mixture to come to a gentle boil while stirring constantly. Let it simmer for about 2-3 minutes until it thickens.
  5. Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt. Mix until well combined.
  6. Let the caramel cool for a few minutes before transferring it to a jar or container. As it cools, it will thicken further.
