Ingredients:
- 1/2 cup unsalted butter
- 1 cup granulated low-carb sweetener (e.g., erythritol or monk fruit)
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- In a saucepan over medium heat, melt the butter.
- Once the butter is melted, add the granulated sweetener and whisk continuously until it’s fully dissolved. This may take about 2-3 minutes.
- Slowly pour in the heavy cream while continuing to whisk the mixture. Be cautious as it may bubble up.
- Allow the mixture to come to a gentle boil while stirring constantly. Let it simmer for about 2-3 minutes until it thickens.
- Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt. Mix until well combined.
- Let the caramel cool for a few minutes before transferring it to a jar or container. As it cools, it will thicken further.
