Servings: 8
Total Time: 15 minutes (plus cooling time)

Ingredients:

  • 2 cups puffed rice cereal (make sure it’s unsweetened)
  • 1/2 cup dark chocolate chips (or sugar-free chocolate chips for fewer points)
  • 2 tbsp peanut butter (or almond butter for a lighter option)
  • 1 tbsp honey or maple syrup (optional for sweetness)
  • 1/2 tsp vanilla extract (optional)

Instructions:

  1. Prepare the Cereal: In a large bowl, add the puffed rice cereal. Set it aside.
  2. Melt the Chocolate and Peanut Butter: In a microwave-safe bowl, combine the dark chocolate chips and peanut butter. Microwave in 20-30 second intervals, stirring in between, until the mixture is smooth and fully melted. (You can also melt them on the stove in a small saucepan over low heat.)
  3. Add Sweetener & Vanilla (Optional): If you’d like the bars a bit sweeter, stir in the honey or maple syrup and vanilla extract until fully incorporated.
  4. Combine: Pour the melted chocolate mixture over the puffed rice cereal. Gently stir to coat the cereal evenly in the chocolate mixture.
  5. Shape the Bars: Line a small baking dish or a loaf pan with parchment paper. Pour the mixture into the pan and press it down firmly with a spatula or your hands to ensure it sticks together.
  6. Chill: Refrigerate the bars for about 30 minutes or until the chocolate has set and the bars are firm.
  7. Serve: Once set, remove the bars from the pan and cut them into 8 equal pieces. Serve and enjoy!
