Ingredients

To make the perfect pot of chicken noodle soup, gather the following ingredients:

  • 2 tablespoons olive oil or butter
  • 1 medium onion, diced
  • 3 large carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth (homemade or low-sodium store-bought)
  • 2 cups cooked chicken (shredded or cubed)
  • 2 cups egg noodles (or your preferred pasta)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Optional: ½ teaspoon turmeric (for color and added flavor)
  • Optional: squeeze of lemon juice for brightness

Step 1: Prepare Your Ingredients

Start by prepping all your vegetables — dice the onion, slice the carrots, and chop the celery. Having everything ready before you start cooking helps the process flow smoothly. If you’re using leftover chicken, shred it ahead of time. You can also use a rotisserie chicken for convenience.

Step 2: Sauté the Aromatics

In a large soup pot or Dutch oven, heat olive oil or butter over medium heat. Add the onion, carrots, and celery, and sauté for about 5 minutes until they begin to soften. Stir occasionally to prevent sticking. Add the minced garlic and cook for another 30 seconds until fragrant. This step develops the base flavor of your soup.

Step 3: Add the Broth and Seasonings

Pour in the chicken broth and stir in the thyme, parsley, bay leaf, and optional turmeric. Increase the heat and bring the mixture to a gentle boil. The spices will infuse the broth, creating a deep, rich flavor.

Step 4: Simmer for Full Flavor

Once the soup begins to boil, reduce the heat to low and let it simmer for about 20 minutes. This allows the vegetables to soften and the flavors to blend beautifully. If you have time, simmering longer — up to an hour — will develop an even richer taste.

Step 5: Add the Chicken and Noodles

Add the cooked chicken and noodles to the pot. Continue cooking for 8–10 minutes or until the noodles are tender but not mushy. Be careful not to overcook — the noodles will continue to soften slightly as the soup cools.

Step 6: Season and Serve

Taste your soup and adjust the seasoning with salt and pepper. A squeeze of fresh lemon juice can add a bright, fresh touch that enhances all the other flavors. Remove the bay leaf before serving.
