Ingredients:
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 can (14 oz) diced tomatoes, drained
- 1/2 cup beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook Ground Beef: In a large skillet, brown the ground beef over medium heat. Drain excess fat if needed.
- Add Aromatics: Add chopped onions and minced garlic to the skillet. Sauté until the onions are translucent.
- Add Mushrooms: Add sliced mushrooms to the skillet and cook until they release their moisture and become tender.
- Season: Season the mixture with dried oregano, dried basil, salt, and pepper. Stir to combine.
- Add Tomatoes and Broth: Add the drained diced tomatoes and beef broth to the skillet. Stir and let it simmer for a few minutes to allow the flavors to meld.
- Transfer to Baking Dish: Transfer the beef and mushroom mixture to a baking dish.
- Top with Cheese: Sprinkle shredded mozzarella cheese evenly over the top of the beef and mushrooms.
- Bake: Bake in the preheated oven for about 15-20 minutes or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley if desired, and serve hot.
Notes:
- Vegetable Variation: Feel free to add other vegetables like bell peppers or spinach for added color and nutrition.
- Cheese Options: You can experiment with different types of cheese based on your preference. Cheddar, Parmesan, or a blend of cheeses can work well.
- Serving Suggestions: This dish pairs well with a side of cauliflower rice, zucchini noodles, or a simple green salad.
- Make-Ahead: You can prepare the beef and mushroom mixture in advance and assemble the dish right before baking.
