Ingredients:

  • 1.5 cups green lentils
  • 4 cups water
  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • Fresh parsley, finely chopped
  • 1 cup breadcrumbs
  • 2 teaspoons salt
  • 2 teaspoons dried mint

Instructions:

  1. Preparation of Green Lentils: Begin by rinsing the green lentils thoroughly under cold water. In a pot, combine the rinsed lentils with four cups of water. Bring the water to a boil, then reduce the heat and simmer the lentils for approximately 30 minutes or until they are tender but not mushy. Once cooked, drain the lentils and set them aside to cool.
  2. Sauteing Aromatics: In a skillet, heat two tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until it turns translucent and lightly golden. Add the minced garlic to the skillet and cook for an additional minute, allowing the flavors to meld together. Remove the skillet from heat and let the mixture cool slightly.
  3. Combining Ingredients: In a large mixing bowl, combine the cooked lentils, sautéed onion and garlic, chopped parsley, breadcrumbs, salt, and dried mint. Using clean hands, thoroughly mix all the ingredients until well combined. The mixture should hold together when pressed, forming a cohesive mixture.
  4. Forming Meatballs: Take small portions of the lentil mixture and roll them into round balls using your hands. If the mixture feels too dry and crumbly, you can moisten your hands slightly with water to help shape the meatballs.
  5. Cooking Meatballs: In the same skillet used for sautéing the onions and garlic, heat the remaining olive oil over medium heat. Once the oil is hot, carefully place the lentil meatballs into the skillet, making sure not to overcrowd the pan. Cook the meatballs for approximately 3-4 minutes on each side, or until they are golden brown and crispy on the outside. You may need to cook them in batches depending on the size of your skillet.
  6. Serving Suggestions: Once the lentil meatballs are cooked to perfection, transfer them to a serving platter and garnish with additional chopped parsley for a pop of freshness. These meatballs can be enjoyed on their own as a delicious appetizer or served with your favorite dipping sauce. For a complete meal, pair them with a side of fluffy quinoa, roasted vegetables, or a crisp green salad.
  7. Storage and Reheating: Leftover lentil meatballs can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, simply place them in a preheated oven or microwave until heated through. These meatballs also freeze well, making them ideal for meal prep or batch cooking.
